She-Goat Cheese Serrano
(Trás-os-Montes)

A cured cheese, made by artisan way, with white and oily paste with some holes, obtained by a slow drain of the curdled-milk after unmixed coagulation of she-goats milk of Serrano bred by action of animal curdling.
Its crust is half-compact, the scent is strong and pleasant and its savour has usually a light spicy.
